The Better Juice solution reduces natural sugars from liquids and purees by converting them to non-digestible compounds, such as dietary fibers and non-digestible sugars.
This environmentally friendly, clean label conversion process uses enzymes in non-GMO microorganisms. The product removes all sugars from all types of natural products, regardless of their sugar composition.

Aside from lowering sugar and a small amount of sweetness, this process does not affect product nutrition, vitamin composition or smell, and maintains original product character & value. And, manufacturers can select the amount of sugar they would like to reduce.
NATURE AT WORK
The core process rearranges the molecular structures of the sugars using the following simple steps:
The product flows through the Better Juice-designed immobilized microorganisms, which contain active enzymes.
The enzymes bio-convert the sucrose to dietary fiber, the glucose to gluconic acid and the fructose to sorbitol.
The product keeps its texture, some of the sweetness and the newly converted compounds, but does not contain the immobilized microorganisms.
The technology was co-developed by Scientific Advisor Roni Shapira, PhD, and Better Juice Co-Founder and Co-CEO Eran Blachinsky, PhD, based on Dr. Shapira’s groundbreaking food-microbiology research at Hebrew University of Jerusalem in Israel.
